Aavakay is the pickle Andhra kitchens are judged by. Firm raw mango is cut into large pieces, each one keeping a shard of the kernel, then cured in ground mustard, red chilli and groundnut oil. Mustard leads the flavour, sharp and hot, and the pickle keeps right through the year.
